Fusariosis, caused by the fungus Fusarium subglutinans f. sp. ananas (Syn. F. guttiforme), is one of the main phytosanitary threats to pineapple (Ananas comosus var. comosus). Identification of plant cell responses to pathogens is important in understanding the plant?pathogen relationship and establishing strategies to improve and select resistant cultivars. Studies of the structural properties and phenolic content of cell walls in resistant (Vitoria) and susceptible (Perola) pineapple cultivars, related to resistance to the fungus, were performed. The non-chlorophyll base of physiologically mature leaves was inoculated with a conidia suspension. Analyses were performed post-inoculation by light, atomic force, scanning and transmission electron microscopy, and measurement of cell wall-bound phenolic compounds. Non-inoculated leaves were used as controls to define the constitutive tissue characteristics. Analyses indicated that morphological differences, such as cell wall thickness, cicatrization process and lignification, were related to resistance to the pathogen. Atomic force microscopy indicated a considerable difference in the mechanical properties of the resistant and susceptible cultivars, with more structural integrity, associated with higher levels of cell wall-bound phenolics, found in the resistant cultivar. p-Coumaric and ferulic acids were shown to be the major phenolics bound to the cell walls and were found in higher amounts in the resistant cultivar. Leaves of the resistant cultivar had reduced fungal penetration and a faster and more effective cicatrization response compared to the susceptible cultivar. Em regiões frias e úmidas o cafeeiro floresce mais de uma vez, o que gera frutos com vários estágios de maturação. Devido ao custo elevado da mão-de-obra em muitas propriedades, o café é colhido de uma única vez com presença de frutos verdes, maduros e secos, o que dificulta a obtenção de cafés de qualidade superior. O uso do calcário, prática simples e de baixo custo, é uma prática adotada pelos cafeicultores na Região de Montanhas do ES em terreiro ou estufa para facilitar o manejo; entretanto; desconhece-se seu efeito na qualidade do café. O objetivo deste estudo foi avaliar a qualidade potencial da bebida do café arábica submetidos ao uso da Cal Virgem Dolomita (CVD) ou calcário comum no manejo da pós-colheita em cafés não lavados, lavados e Cereja Descascado. Foram avaliados sob delineamento inteiramente casualizados, com três repetições, 16 tratamentos pós-colheita com frutos de café da variedade Catuaí Vermelho IAC-44. Trabalhou-se com frutos não lavados, lavados, descascados e não descascados com ou sem adição da CVD ou calcário, mexendo-se 03 ou 10 vezes ao dia. Após o processo de secagem em estufa as amostras foram encaminhadas para a avaliação sensorial através da prova da xícara utilizando a metodologia da Specialty Coffee Association of America, onde se avaliou os atributos de fragrância/aroma do pó, sabor, finalização, acidez, corpo, uniformidade, balanço, xícara limpa (ausência de defeitos), doçura, nota geral e nota total final. Os resultados obtidos mostraram que houve diferença significativa para as características de Fragrância/Aroma, Balanço, Nota Geral e Nota Total entre os 16 tratamentos avaliados e que apenas o café Cereja Descascado alcançou notas de cafés especiais. Pode se concluir que o uso da CVD e do Calcário, associado a outras práticas pós-colheita não proporcionou melhoria na qualidade sensorial dos cafés, podendo, no entanto, serem viáveis em outras condições de secagem. No ambiente avaliado em Marechal Floriano-ES, que apresenta locais frios e úmidos, apenas a prática pós-colheita de descascamento dos frutos cereja possibilitou a obtenção de cafés especiais. Devido a fermentação ocorrida no processo de secagem, a lavagem do café e a retirada dos frutos bóia não proporcionou melhoria na qualidade de bebida do café. Em relação aos demais tratamentos, além da qualidade especial, o descascamento do café cereja proporcionou redução de nove dias no tempo de secagem.
In cold and wet regions, the coffee plant blooms more than once, which bears fruit in various stages of maturation. Due to the high cost of hand labor in many farms, coffee fruits are harvested at once with the presence of green, ripe and dry
fruits, making it difficult to obtain top quality coffees. The use of limestone is a simple and low cost practice, adopted by some growers in the Mountains Region of Espírito Santo state in the yard or greenhouse to facilitate the management, however, it is unknown whether its effect on coffee quality. The aim of this study was to evaluate the potential quality of arabica coffee drinks subjected to the use of Dolomite Lime Virgin (DLV) or common limestone in the management of post-harvest coffees, not washed, washed and pulped. The work was evaluated under completely randomized design with three replications, 16 post-harvest treatments with coffee fruits of Catuaí Vermelho IAC-44. We worked with not washed, washed, pulped and unpeeled fruits, with or without the addition of common lime or DLV, moving three or ten times a day. After the process of oven drying, the samples were submitted to sensory evaluation by cup test using the methodology of the Specialty Coffee Association of America, which evaluated the attributes of fragrance, flavor, finish, acidity, body, uniformity, balance, clean cup (no defects), sweetness, overall score and final score. The results showed that there was significant difference in the characteristics of fragrance, balance,
overall score and final score between treatments and only the cherry fruits pulped achieved grades of specialty coffees. It can be concluded that the use of Lime and DLV, with other post-harvest practices did not improve the sensory quality
of the coffees, which may, however, be feasible in other drying conditions. The environment valued at Marechal Floriano-ES, which features such cold and damp, just the unpeeled postharvest practice of cherry fruit allowed obtaining specialty coffees. Because fermentation occurred in the drying process, the washing of coffee fruits or exclusion of the fruits float did not improve the quality of coffee beverage. Compared to other treatments, besides the special quality, peeling the coffee cherries provided nine-day reduction in drying time.
